Peachy Chicken Kebabs – We went peach picking at a local farm and were trying to come up with healthy ways to prepare them and I made these Kebabs. I drizzled the chicken with balsamic vinegar before grilling and everything else (red onions, red peppers, white mushrooms, peaches, basil, and baby yellow tomatoes) was just put on skewers and grilled up. I prepared a balsamic reduction (heated balsamic vinegar on the stove until it started to thicken) and drizzled over everything at the end. Served with Rice Pilaf. Yum-O! Doesn’t the picture make you hungry?
Acai Strawberry Smoothie – We got a Ninja blender and have jumped on the smoothie train. I have been experimenting with smoothies and trying to find ways to minimize the sugar and make them filling. This one has been the best so far. I found Sambazon Acai Berry Superfruit Packs at Costco which are basically acai berry juice in a ready to go smoothie pack (there are 10 in a package). Add to that 1/4 cup of strawberries, 1 cup almond milk, 1/2 cup spinach, 1/4 cup plain greek yogurt, and some vanilla protein powder. Delicious and kid approved!
Roasted Mexican Zucchini– This one was a little spicy for the kids (and some adults) but was a hit with the entire family. You can always dial back the chili powder. The key is the cotija cheese!
Cranberry Chicken Salad – This one is good but I substituted the mayo for Greek Yogurt and then left out the lemon (with the greek yogurt, you don’t need anymore acid). Great for a picnic lunch!
