Perfect Fit Meals – I found these little gems in the prepared refrigerated foods section of the grocery store. They are fast, healthy meals in the perfect portion size (for me). Just heat in the microwave and they are ready to go. I tried the Chipotle BBQ Chicken, Havana Chicken, and Herb Crusted Chicken and all were pretty good. The package recommends heating and then seasoning… I found out why. Some were a little bland at first but some salt and pepper perked them right up. I know I am going to use these again especially for those on-the-go days.
Beef and Broccoli Stir Fry – Usually when we make this stir fry, we make the sauce from a packet (I know, I know). When we ran out of packets with no time to run to the store, Pinterest saved me again when I had to improvise. It turned out to be quite delicious even though some of the ingredients made nervous! Try swapping out the Soy Sauce for Teriyaki Sauce too.
Skinny Greek Layer Dip – I love hummus and this is a great take on it to make it a little more exciting. When I eat the same things over and over, it is nice to have it in a new and different way every once in awhile.
